The Rutland Hotel, located in the vibrant center of Edinburgh, is seeking talented, enthusiastic, and passionate Full-Time & Part-Time Floor Staff and Bartenders to join our teams across three unique venues: Kyloe, The Huxley and Understory. Each venue offers a very different style of service, so whether you love polished tableside dining, high-energy all-day service or late-night cocktails, there's a place for you here.

Kyloe Restaurant & Grill

Kyloe is Edinburgh's AA Rosette gourmet steak restaurant. We work alongside some of Scotland's finest farms and butchers, and we serve lunch and dinner, with a busy Sunday roast. Service at Kyloe is standards-led and knowledge-driven. You will guide guests through our cuts, provenance and pairings, present our signature 'Steak Board' and 'Knife Roll' at the tableside, and pace each table with care. Kyloe suits someone who is confident, outgoing, and takes real pride in polished, attentive service.

The Huxley

The Huxley is our busiest venue, serving American-inspired cuisine with a Scottish twist. We serve breakfast from 8am through to evening meals, alongside quality cocktails and our very own Signature Cold Town Beer. Service is high volume and fast-paced, and it relies on strong teamwork and clear communication with the kitchen. The Huxley suits someone who stays calm under pressure, keeps things moving and makes every guest feel looked after, even when the room is full.

Understory

Tucked below street level, Understory is our new “five-star dive bar”. It pairs polished standards with relaxed, unpretentious delivery. Cocktails are made in view of the guest, and every visit follows a guided journey from welcome to goodbye. You will talk guests through our drinks and recommend the right serve rather than upsell. We're open until 1am during the week and 3am at weekends, so late-night availability is a must. Understory suits someone who loves drinks and loves people.

Creativity and the ability to collaborate with our current team to deliver quality products are essential. Experience in a high-standard, fast-paced environment is desirable, but a can-do attitude, a willingness to learn, and an all-hands-in mentality are essential.
