The Role

We're opening a new Scottish pub and dining room in the heart of Edinburgh's Old Town, and we're looking for a Chef de Partie to join us from the beginning.

Food is a huge part of what we're building. Think brilliant Scottish produce, charcoal cooking, great seafood and proper pub classics, all done really well. We want to create somewhere people come for a pint and end up staying for dinner, or book a table because they've heard how good the food is.

As a Chef de Partie, you'll be an important part of the kitchen team, working closely with the Head Chef, Sous Chefs and wider brigade to deliver consistently excellent food and help us build something we're all genuinely proud of.


What You'll Be Doing

  • Running your section during service and making sure dishes are prepared and presented to a consistently high standard.
  • Preparing and cooking fresh food from scratch, working with great Scottish produce and seasonal ingredients.
  • Supporting the Head Chef and Sous Chefs with menu development, prep and daily kitchen operations.
  • Working as part of a strong kitchen team, communicating well and supporting your colleagues during busy services.
  • Keeping your section organised, clean and fully prepared for service.
  • Following food safety, hygiene and health & safety standards at all times.
  • Helping with stock rotation, deliveries, storage and minimising food waste.
  • Supporting and helping develop Commis Chefs and more junior members of the team.
  • Being part of a new opening and helping us get the kitchen, systems and standards right from day one.


What We're Looking For

  • Experience as a Chef de Partie in a busy, quality-focused kitchen, or a strong Commis Chef ready to take the next step.
  • A genuine passion for good food and cooking from scratch.
  • An interest in Scottish produce, seasonal ingredients and charcoal or open-fire cooking would be a bonus.
  • Someone who takes pride in their section and cares about consistency, quality and presentation.
  • A calm and positive approach during busy services.
  • Good organisation, communication and teamwork.
  • Someone who is keen to learn, develop their skills and progress within the kitchen.
  • A strong work ethic and a genuine desire to be part of building something from the ground up.
