Deputy General Manager – Cold Town House, Edinburgh
Set in the heart of Edinburgh’s iconic Grassmarket, Cold Town House is one of Scotland’s most exciting, high-volume hospitality venues, and we’re looking for a Deputy General Manager ready to step into a big, fast-paced operation and make a real impact.
This is a large-scale, multi-floor venue with serious pace, complexity, and expectation. Craft beer brewed on-site, a high-output Neapolitan pizza kitchen, live entertainment, and one of the most in-demand rooftop terraces in the city, all under one roof.
You’ll work directly alongside the General Manager to lead the operation, develop the team, and help drive performance across every part of the business.
The Venue
Cold Town House is a three-floor operation with multiple trading environments:
- Live Bar & Taproom – High-energy, late-night trading, live music, tank-fresh beer
- Brewery & Pizza Floor – Open kitchen, artisan Neapolitan pizza, microbrewery at the core
- Rooftop Terrace – One of Edinburgh’s best rooftops with direct views of Edinburgh Castle
- Grassmarket External Trading – High-footfall, year-round tourism, and event-driven peaks

This is a site that trades hard, with big teams, big shifts, and big expectations.
The Opportunity
You’ll be at the heart of one of our flagship venues, supporting the GM while taking real ownership of the day-to-day operation. This means:
- Leading from the floor in a high-volume, high-energy environment
- Managing and developing a large team across multiple departments
- Driving standards, service, and atmosphere every day
- Playing a key role in delivering financial performance
This role is ideal for a strong existing high-volume DGM or a General Manager from a smaller venue ready to step into a bigger operation and grow with the company.
What We’re Looking For
We’re looking for someone who already understands high-volume hospitality and is ready to step up within it.
- Experience in a high-volume hospitality venue
- Experience supporting or leading large teams
- Strong leadership presence with the ability to motivate and develop a team
- Good commercial awareness; understanding labour, costs, and performance
- Passion for guest experience and creating atmosphere
- Strong organisational and communication skills
- Calm under pressure with solid decision-making ability
Your Role
Operational Support – Support the GM in delivering a smooth, high-performing operation across all floors.
Team Leadership & Development – Lead from the front. Coach, develop and motivate the team to deliver their best.
Financial Performance – Support with cost control, labour management, and delivering against budget.
Guest Experience – Drive high standards on the floor, ensuring every guest has a great experience.
Compliance & Standards – Ensure all procedures, policies, and legal requirements are consistently met.
Salary & Package
- £35,000 – £38,000 base salary (DOE)
- On-target earnings of up to £45,000 (including tronc and bonus)
