A rare opportunity to lead a 30+ strong brigade across a Rosette restaurant, high-volume all-day dining venue and exciting new concept launch.


An exciting opportunity has arisen for an experienced and ambitious Head Chef to join the leadership team at The Rutland Hotel, one of Edinburgh's leading hospitality destinations.


Reporting directly to the Executive Chef, this role will oversee a brigade of approximately 30-35 kitchen team members across three distinct food and beverage operations:

  • Kyloe – our award-winning 1 AA Rosette steak restaurant.
  • The Huxley – a busy all-day dining venue serving breakfast, lunch and dinner.
  • Heads & Tales – our iconic cocktail bar, currently preparing for an exciting refurbishment and new food concept launch.


This is a unique opportunity for a strong kitchen leader to make a significant impact across multiple venues while helping shape the future direction of one of Edinburgh's most recognised hospitality businesses.


Head Chef Duties

Kitchen Leadership & Operations - Lead the day-to-day operation of all kitchen teams, ensuring exceptional standards of food quality, consistency, cleanliness and service delivery across all venues.


Team Management & Development - Lead, coach and inspire a brigade of approximately 30-35 team members. Support recruitment, training, succession planning and the ongoing development of chefs at all levels.


Menu Development & Innovation - Work alongside the Executive Chef to develop seasonal menus, improve existing offerings and support the launch of exciting new food concepts within the business.


Health, Safety & Compliance - Maintain the highest standards of food safety, cleanliness and compliance, ensuring all kitchens operate in accordance with company policies and legal requirements.


Stock, Labour & Cost Control - Manage inventory, purchasing, stock control and labour deployment, ensuring operational efficiency while delivering against budgeted targets.


Guest Experience - Work collaboratively with front-of-house teams to ensure an exceptional guest experience, maintaining the high standards expected across all Rutland venues.


Required Skills

Leadership & Team Management - A proven ability to lead, motivate and develop large kitchen teams while creating a positive and professional working environment.


Culinary Expertise - Strong culinary knowledge and experience within quality-led hospitality businesses, with a passion for delivering exceptional food.


Multi-Outlet Operational Experience - Experience managing complex kitchen operations, balancing multiple service styles and maintaining standards across different concepts.


Commercial Awareness - Strong understanding of labour management, stock control, food margins and overall kitchen profitability.


Organisation & Time Management - Excellent planning and organisational skills, with the ability to prioritise effectively and perform under pressure.


Creativity & Innovation - The ability to contribute new ideas, develop menus and support concept evolution while maintaining consistency and operational excellence.
